The South of Tolima is highly recognised as one of the most important coffee origins in the country. El Indio was processed using the natural method which means the ripe coffee cherries were sundried on raised beds under temperature-controlled conditions until the ideal moisture content was achieved.
This lot is vibrant and bright with notes of strawberry, agave syrup, and blood orange on the finish. A great balance between sweetness and acidity with a smooth, syrupy texture.
