At Caravan, food and drink have always travelled together. Our cocktail menu is created with the same curiosity as our food: inspired by ingredients, flavours and stories discovered from around the world, then brought back through a Caravan lens.
Whether you’re joining us for brunch cocktails, after-work drinks, a pre-theatre spritz or a full dinner feast, every drink on the menu is designed to bring something extra to the table.
We caught up with our Head of Bars, Emanuele, to discover how a Caravan cocktail goes from an idea to the glass.
HOW DO YOU CREATE A NEW COCKTAIL MENU?
Our drinks development process starts in the kitchen.
Just like our food menu, our cocktails are led by flavour. Our drinks team works closely with our chefs from the very beginning, exploring new dishes, seasonal ingredients and the flavours coming through on the menu.
Sometimes a cocktail begins with an ingredient. Sometimes it’s inspired by a place we’ve travelled, a flavour combination we love, or a classic cocktail we want to give the Caravan treatment.
The aim? Something familiar enough to make you feel at home, but with a little unexpected twist.
WHAT MAKES A COCKTAIL DISTINCTLY CARAVAN?
A Caravan cocktail should be three things: well-travelled, flavour-led and easy to love.
We’re inspired by ingredients, techniques and flavour combinations from around the world, but we’re not interested in creating complicated cocktails just for the sake of it.
Every ingredient needs to earn its place.
When developing our drinks list, we think about the same things our chefs do: acidity, sweetness, spice, bitterness and texture.
Some drinks complement dishes. Others create contrast. A bright, citrus-led cocktail might cut through something rich and indulgent, while a savoury serve can bring out spices and charred flavours.
From small plates and pizzas to big sharing feasts, our cocktails are designed to travel across the whole menu.
MEET THE CHEF'S MARGARITA
A Caravan classic, and one of our favourites.
The Chef’s Margarita takes everything we love about a traditional margarita and adds a little Caravan magic: tequila, mezcal, pink grapefruit, lime, agave and our signature cumin salt.
The cumin salt brings an earthy, savoury flavour that enhances the citrus and agave while creating a natural connection back to our food.
It’s fresh, vibrant and works beautifully alongside dishes with spice, grilled flavours, charred vegetables and bold ingredients.
THE STORY BEHIND OUR DISCO SOUR
Bright, playful and full of energy, the Disco Sour is our take on a Pisco Sour.
We’ve taken the fresh citrus and silky texture of the original and added Italo Disco Vermouth (our favourite!) for extra depth, bringing herbal, citrus and lightly bitter notes.
The result is refreshing, balanced and a little unexpected. Everything a Caravan cocktail should be.
Choosing not to drink alcohol shouldn’t mean choosing something less exciting.
Our low and no-alcohol cocktails are created with exactly the same approach as the rest of the menu: flavour first.
We work with products we love, like Botivo, Pentire Coastal and Crodino, because they bring complexity, depth and a proper sense of occasion.
Botivo brings bittersweet herbal notes. Pentire Coastal adds savoury botanicals and freshness. Crodino delivers that classic Italian aperitivo-style flavour.
No shortcuts. No afterthoughts. Just genuinely delicious drinks.
