From a young age, farmer Miriam Perez had a profound passion for nature and the coffee community in which she was raised in northwest Honduras.

Our Head of Coffee, Andrea, first met Miriam at a coffee conference in 2023, where her enthusiasm and expertise were immediately obvious. For this natural process lot, Miriam used the lunar calendar alongside a Brix meter to determine the precise moment to harvest.

This lot is creamy and round, with flavours of blackcurrant, buttery pain au raisin, and chocolate ganache, with a bright tangerine finish.

BREWING TIPS

Natural process coffees can often be quite heavy in the cup, so to clean them up and increase clarity, try grinding a bit coarser than normal, using a ratio of 1:15 coffee to water.
