Over the last two decades, Honduras has become the dominant exporter of coffee in Central America. Around 95% of coffee grown in Honduras is produced by smallholders, and this one is no exception. José David Perez Zelaya is third generation coffee producer based in the town of Mogola near Márcala in the region of La Paz.
José cultivates an interesting variety called Parainema, which produces an interesting flavour profile. Starting with almond biscotti, this cup opens up to sweet stone fruit and berries with a satisfying creamy body.
